Sausage and Kale Stir-Fry

Ingredients

  • 1/2 tbsp oil - or as needed

  • 5 links of all beef sausage (or sausage of your choice), sliced diagonally

  • 5 cloves of garlic, chopped

  • garlic salt and pepper, to taste

  • 2 large bunches of kale, cut into bite sized pieces

  • 1 tbsp of balsamic vinegar, or to taste

Directions

  1. Heat oil in a cast-iron skillet over medium-high heat.

  2. Add the sliced sausages and cook 4 -5 minutes or until lightly browned (me and my husband like our sausage a little burnt).

  3. Add your chopped garlic into a pan and stir for one minute. Garlic burns fast so you don’t want to take your eyes off it

  4. Working in batches, add the kale to the skillet. Reduce heat to medium and cook until kale wilts. Repeat with remaining kale. Season with garlic salt and pepper, then a splash of balsamic vinegar. Mix for another minute.

  5. Serve immediately over a bed of rice or by itself. Enjoy!
