Easy local style Fried Rice

In Hawaii, having fried rice for breakfast is something to look forward to. Using leftover rice from the day before and any ingredients you have in your fridge makes for a delicious meal. 

Since Thanksgiving was yesterday, I didn’t go to the grocery store because it was CRAZY BUSY. Besides, I was too tired to put in extra effort on breakfast, so of course I ended up making fried rice. Being born and raised on Oahu, fried rice was always an option to enjoy for breakfast. Trust me, go to any breakfast restaurant and fried rice will be available. It is a fantastic dish to make that utilizes anything in your pantry and it takes ten minutes to make. My daughters love it just as much as myself and I feel relieved having them start their day with vegetables. It is customizable and as you can see, no oil is used. I also use chicken bouillon powder instead of salt because it' adds so much flavor and I don’t need much of it. Try out this recipe and you won’t be disappointed!

Ingredients:

  • 3 cups left over rice, cold

  • 1 cup frozen vegetables (I used peas and carrots), you do not need to thaw

  • 2 eggs

  • 1/2 tbsp shoyu (soy sauce)

  • 1/2 tsp chicken bouillon powder, or salt and pepper to taste. (be careful, chicken bouillon is salty)

  • 1/4 cup Portuguese sausage, roughly cubed, add as much as you want

Directions:

  • Heat a wok on medium high heat and fry your Portuguese sausage until cooked through. You don’t need oil as the Portuguese sausage naturally has oil.

  • In a small bowl, scramble your eggs and carefully pour your eggs into the wok with the cooked Portuguese sausage. Scramble the eggs for 30 seconds or cooked to your preference.

  • Add your frozen vegetables to the pan and sauté for 2 minutes. Carefully add your cold rice to the pan and fry until your rice is combined with the sausage, eggs, and vegetables. Be sure to break your rice apart during this stage. Fried rice should be a little dry and not mushy.

  • Once combined, add your shoyu and chicken bouillon powder. Season to taste. Please be careful if you are using chicken bouillon, it is salty, so I don’t add a lot at first. Continue to cook fried rice for another 3 minutes.

  • Garnish with green onions if you have any and serve!
